1 pork tenderloin roast 2 1/2-3 pounds
1 Savu Smoker Bag
For the rub:
3 tablespoons chili powder
2 tablespoons onion powder
2 tablespoons paprika
2 tablespoons garlic powder
1 teaspoon salt
1 teaspoon ground black pepper
For use on the grill: Place the rack 2-5 inches above the heat source and prepare a gas or charcoal grill for medium-hot coals.
For use in the oven: Lower rack to the lowest position and preheat to 450 degrees F.
Cut the tenderloin into 1-inch pieces.
Combine dry ingredients in a small mixing bowl; blend well. Apply the dry rub to the medallions and place meat in the smoker bag. Fold bag to seal per package instructions.
Oven: Cook for 15 minutes, and then reduce heat to 350 degrees and cook for an additional 5 minutes or until the internal temperature reaches 165 degrees.
GRILL: Cook for 18 minutes or until the internal temperature is 165 degrees.
Carefully remove the bag from the heat and allow to rest 5 minutes before opening the bag.
